Grandma Vashti's Sweet Potato Pie

Grandma Vashti's Sweet Potato Pie
3 med. sweet potatoes (3 cups)
½ tsp. nutmeg
1 stick of butter, softened
1 tsp. vanilla
⅔ c. of sugar
¼ tsp. baking powder
½ can Pet milk
9 in. unbaked pie crust
4 eggs
Boil sweet potatoes whole in skin for 40-50 minutes, until tender. Run cold water over them and remove skin. Break apart sweet potato in a bowl. Add butter and mix well with a mixer. Stir in sugar, milk, eggs, nutmeg, and vanilla. Beat on medium speed until mixture is smooth. Add baking powder. Pour into unbaked pie crust. Bake at 350 degrees for 55-60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a soufflé, and then will sink down as it cools. Pie and crust should be golden brown.
