DeDe's Collard Greens

DeDe's Collard Greens



4-6 bunches of collard greens, cleaned
5 slices of bacon or smoked turkey
1 smoked ham hock or smoked turkey
Seasoning salt to taste (optional)
Black pepper to taste
7 cups of water



Lay collard greens on top of each other, 4 at a time. Roll and then cut in half with a knife OR break stems off and tear leaves into small portions. Cut even smaller if you have large leaves. Line the bottom of a large stockpot with bacon. Cook on medium heat until done; obtain as much bacon grease as possible.

Add the water to the stockpot and the grease (optional) and bring to a boil. Add ham hock, pepper, and salt to taste. Let mixture boil for 10 minutes. Add the collard greens, and more salt and pepper to taste, if desired. Rapidly boil for 45 minutes. Reduce heat and let simmer for 4-6 hours. Serve with cornbread and apple cider vinegar.

*Heathier Choice:
Instead of
grease, ham hocks or bacon for stock, cook smoked turkey and add the ingredients to it’s stock.
