Macaroni and Cheese

2 c. uncooked macaroni
2 Tbs. butter
2 Tbs. flour
3 Tbs. prepared mustard
1 tsp. salt
2 ½ c. milk
¾ c. bread crumbs
2 ½ c. shredded cheese*

Preheat oven to 375 degrees.

Cook macaroni according to packing instructions.

While macaroni is cooking:
In saucepan melt butter. Add flour, mustard and salt. Gradually stir in milk. Over medium heat, cook and stir until slightly thickened (mixture will coat spoon). Remove mixture from heat. Stir in shredded cheese until it melts, reserving ½ cup of cheddar cheese for topping.

Stir in cooked macaroni. Pour into greased baking dish. Top with ½ cup of cheese, then bread crumbs.
Bake 20-25 minutes or until bubbly. Makes 6-8 servings.

*Suggestion:
Use cheese of your choice. Using different cheeses gives it more flavor: use various combinations of cheddar, sharp cheddar, Colby, jack, mozzarella, provolone, Asiago, or white cheddar cheese.
