The Easiest Stir-Fry Ever!

2 cups instant whole grain Brown Rice
1 3/4 water (adjust according to package)
1 small Onion
3 skinless boneless Chicken Breasts
1 tbl. Canola or Sesame Oil
2 bags (16 oz each) frozen mixed Stir-Fry Veggies
1 jar (10 oz.) La Choy Sweet & Sour Sauce
1/2 cup slivered or chopped Almonds, Walnuts or Cashews
Place rice and water on stove. Cover, bring to a boil and reduce heat to medium low. Set timer for 5 min. When timer sounds, remove from heat and allow to sit, covered. Meanwhile, cut onion into wedges and chicken into strips. Heat oil in a non-stick pan or wok. Add onion and chicken. Cook until chicken is browned. Add stir-fry to pan. No need to thaw. Cook 11-13 min. to desired tenderness. (it’s ready when the water from veggies evaporates.) Stir in sweet and sour sauce and nuts. Let cook for 2 more min., then serve over brown rice.
