Easy Pepper Steak Stir-Fry

2 cups Instant Whole-grain Brown Rice 1 3/4 Water (adjust based on rice directions) 1 Zucchini, sliced into 1/2 inch rounds 1 Yellow Squash, sliced into 1/2 inch rounds 1lb Top Sirloin Steak, well trimmed 1 can (14 1/2oz) Beef broth 3 tbl. Cornstarch 1 tbl. Soy Sauce, reduced-sodium 1 tbl. Sesame Oil 1 tsp. Minced Garlic (2 cloves) 1 Onion, Cut into wedges 1 Red Pepper, cut into strips 1 Green Pepper, cut into strips 1 Yellow Pepper, cut into strips
Combine rice and water in a microwave-safe dish. Cover and cook on high 9-10 min. (Steam the squash separately if you prefer.) Slice steak ‘across the grain’ into very thin strips. Mix broth, cornstarch, and soy sauce together in medium-size bowl. Stir and set aside. After slicing onion and peppers, heat the oil in a large non-stick frying pan or wok. Add vegetables and stir-fry 2 min. Add beef and cook 2 min.or until done. Re-stir the broth and add to wok. Stir until thick and bubbly. Serve over rice.
