"Unfried Rice Dinner

1 c. shredded or finely chopped carrots 3 green onions, tops and bottoms, chopped 1/2 green pepper, chopped 7 oz. can sliced mushrooms, drained 2 t. sesame oil 1/2 t. ginger, grated 1/2 t. minced garlic 3 c. cooked brown rice 1 c. frozen peas 3 T. soy sauce 2 eggs, beaten 5 grinds fresh ground pepper
Prep vegetables - carrots, onion, green peppers and mushrooms. For speed, use the food processor to coarsely shred or finely chop the carrots.
Heat oil, ginger and garlic in a non-stick skillet over medium-high heat. Add above vegetables, and stir fry 1-2 minutes.
Stir in rice, peas and soy sauce and cook 5 minutes.
In a small cup, beat eggs with a fork. Push rice mixture to side of skillet, add eggs and pepper to the open side. Allow eggs to set thoroughly. Cut the cooked eggs into rectangular bites.
Gently combine eggs with rice.
