Chicken Picatta

1/2 of a small onion, sliced
4 t. lemon juice
4 t. capers (drained)
4 chicken breasts
1 lemon, sliced into 4 rounds
2 T. chopped garlic
Pepper
Parsley
Artichoke hearts/mushrooms (optional)

Preheat oven to 425 degrees. separate onion slices and place them on a baking dish. Place chicken breasts on top. Sprinkle lemon juice, garlic, capers, pepper, (artichoke hearts/mushrooms) on top. Place lemon rounds on top. Sprinkle on parsley. Add a  little water.

Cook for 20 minutes covered. Uncover fro another 5 minutes.
