Stromzoni filled with Peppers, Veggies or Italian Sausage

3 c. red, yellow and green peppers, chopped 1 med. onion, chopped 1 T. minced garlic 1 T. oil ¼- ½ t. crushed red pepper ¾ c. shredded Mozzarella cheese ¼ c. imported Romano or Parmesan cheese ½ c. ricotta cheese 1-2 T. fresh basil or dried 10 oz. pkg. refrigerated pizza dough 1 egg slightly beaten Salt & pepper to taste
Saute peppers, onions and garlic in hot oil over medium heat until al dente (not quite tender). Stir in crushed red pepper, salt and pepper. Set aside to cool slightly. Mix all the cheese with the basil. Stir pepper mixture into cheese mixture. Mix well. On floured surface, roll out pizza dough to a 16x10 inch rectangle. Cut into two 8x10 inch rectangles. Spoon half of the pepper mixture along one of the long sides of the dough rectangles. Leave a 1 inch border along the long sides and a half inch border on the short sides. Fold one long side over the pepper mixture. Seal seams and ends, tucking seams under the loaf.
Preheat oven to 400 degrees. Line a large baking sheet with foil or parchment paper. Grease foil. Carefully place loaf on prepared baking sheet. Repeat with second loaf. With a knife cut 4 diagonal slits in the top of each loaf. Brush loaves with egg. Bake for 15 minutes or until golden brown. Cool slightly, then slice in half or smaller.
Different kinds of vegetables can be used or you can brown some loose Italian sausage with peppers and onions and cheese. Use your imagination.
