Italian Biscotti Cookies

½ lb. soft butter
2 c. sugar
6 eggs
2 t. vanilla or almond extract
½ t. salt
4 t. baking powder
4 c. flour
2 ½ c. chopped, toasted almonds




Preheat oven to 375 degrees. Cream butter and sugar. Add eggs one at a time. Mix after adding each egg. Add vanilla and dry ingredients. Mix well. Add nuts and mix. Separate dough into 2 parts. Shape into logs about 2-3 inches wide. Put logs on 2 greased cookie sheets. Bake 15 minutes. Test with toothpick to see if done. Let logs cool a little. Slice logs about ½ inch thick and put back on cookie sheet. Return to oven for 10-12 minutes.
