Halibut with Tomato Basil Sauce

3 plum tomatoes cut into ¼ inch slices
1 T. olive oil
3 garlic cloves, peeled
¼ t. balsamic vinegar
1 T. minced, fresh basil
2 halibut steaks
Water
Topping:
¼ c. mayonnaise
¼ t. Dijon mustard
½ c. breadcrumbs
1 T. minced, fresh basil
2 T. chopped olives
Place tomatoes on a small baking sheet and drizzle with oil. Wrap the garlic in foil and place on the baking sheet. Bake at 450 degrees for 15 minutes or until edges of tomatoes are lightly brown. Put tomatoes and garlic in a blender. Process it until smooth. Add vinegar, basil and some water to achieve desired thickness. Place halibut in a baking dish. Mix mayonnaise and mustard and spread over the fish. Mix breadcrumbs, basil and olives. Sprinkle over mayonnaise mixture and press down gently. Bake uncovered at 400 degrees for 20 minutes or until topping is golden brown and fish flakes easily with a fork. Put cooked fish on a plate and spoon tomato sauce around the fish. You can use other kinds of fish if desired.
