Zepolle, Good-Ta-Laddies (Fried Dough)



1-2 lbs. flour
1 pkg. dry yeast
Salt, water, sugar
1 T. oil, plus oil to cook them in, about 2-3 cups of oil



Dissolve yeast in warm water; add salt so it tastes like salt water. Make a well in the flour; add yeast and one tablespoon of oil. Start pulling flour from the side and mix well. Add more water if needed. Cover with a towel or Saran Wrap for 1-2 hours. Cut a piece of the dough (about 1/8 in. thick) and roll out onto a flour board. Cut up in pieces, not too big. Fry them in heated oil until golden brown on both sides. Put them on a paper towel. You can roll them in sugar or keep them plain. (I use them like a slice of bread and put beef or lunch meat on them. Warm them up in the oven the next day for a few seconds.
